With the holidays just around the corner, I'll be entertaining you with my holiday favorites. These being one of them. Twice baked sweet potatoes with roasted marshmallows. Their sweet, buttery, melt-in-your-mouth texture is the perfect compliment to any Thanksgiving dish.
- Sweet Potatoes
- Desired amount of marshmallows
- Desired amount of brown sugar
- Desired amount of butter
- Salt and Pepper to taste
- Crushed Walnuts
Place the sweet potatoes in the microwave to steam for about 10 minutes, or until soft. Set oven to 375 degrees. While waiting for your oven to heat up, line your sweet potatoes on a baking sheet. Cut slits through the top of the potatoes, about a quarter of the way down. Cook potatoes in the oven for about 10 minutes. Remove and scoop interiors of potatoes out into a mixing bowl. Add brown sugar, butter, salt, pepper, crushed walnuts and smash. Refill potato skins with mashed potato mixture and top with a handful of marshmallows. Set your oven to broil and let potatoes crisp up a bit. No longer then a couple minutes, or until golden brown.
