Jason Sobocinski founded Caseus in 2008 and was joined by his brother Tom Sobocinski a year later.
They were always fascinated by food trucks and received raving reviews for their grilled cheese sandwiches. Merging these two passions seemed to make great sense, and voila - this is how The Cheese Truck was born.
For the past 8 years they've taken their crispy melty goodness to the streets of New Haven.
"We have a very simple product and use only the highest quality ingredients, showcasing local ingredients as often as possible." says Jason.
It's true, you can taste the quality. Their sandwich was fresh, crunchy, and melted in your mouth. Their customers call it #CrispyMelty.
We tried a BLT, with their signature pickles and mustard on the side. It was heaven.
Jason and Tom both believe that the best part of their job is meeting lots of fun people, and also seeing how excited people are to find them at events.
